LAVA CAKE
Lava cake or chocolate fondant is a very easy to make dessert, perfect anytime you have a sweet- tooth or the times you end up with unannounced guests. It is easy to make because we can prepare the composition ahead and freeze it in individual molds (it can be kept for a month in the freezer), and when we crave for a sweet treat, just take the frozen molds and bake it in the preheated oven at 220 degrees, for 10-12 minutes.
Next, I’ll introduce you one of my recipes of chocolate fondant with salted caramel inside.
Ingredients:
(for 8 servings)
200 g chocolate (70% cocoa)
200 g butter
100 g sugar
4 tablespoons flour
4 eggs
8 teaspoons of salty caramel
Some oil for greasing the molds
1 cocoa spoon
Method:
Grease eight muffin molds with oil and powder with a little cocoa, then put them in a freezer.
Put the chocolate, butter and sugar in a saucepan and melt in bain-marie for about 10-12 minutes until the sugar dissolves completely.
Then take the mixture of the stove and incorporate the 4 eggs as follows: beat each egg separately in a bowl and then pour into the mixture stirring constantly. At the end gradually add the flour and stir well, from top to bottom, carefully incorporating it.
Remove the molds from the freezer, fill them 3/4 with the mixture obtained above, put a teaspoon of caramel cream in the middle of each mold and push it in, then put it back in the freezer for another hour.
Heat the oven to 220 ºC. Take the molds from the freezer, place them on a baking tray and bake for 10-12 minutes.
Carefully remove the cake from the molds, place on the serving plate and serve it immediately, warm, with a cup of your favorite ice cream.
