Just the other day I posted a recipe for chicken liver pate, and I recommended to serve with apple chutney as I usually serve home for my family. What is this chutney? It’s often spicy, sometimes sweet or sweet and sour, and comes from Indian cuisine. There are many types of chutney with fruit and vegetables and this is one of my favorites, made with Golden apples like marmalade. It goes well with the pate and can also be a suitable side for cheese, cold steak and other.
Ingredients:
3 tablespoons olive oil
2 onions
2 cm ginger root
1 tablespoon candied orange peel
4 tablespoons brown sugar
4 tablespoons apple vinegar
2 large Golden apples
Salt, pepper
Method:
- Heat the oil in a pan and add the finely chopped onion, the grated ginger and a little salt. Leave for 5-6 minutes, and add the orange peel and brown sugar. Leave it simmer for a few minutes, stirring occasionally until the sugar is caramelized.
- Then add apple vinegar and cleaned, peeled and cubed apples. Leave simmer for 8-10 minutes until the apples soften and season of salt and pepper.
- Allow to cool and serve, or refrigerate in a glass container with a lid.
