ZUCCHINI BRUSCHETTI

Here is another zucchini recipe, very easy to do, and yummy: zucchini, cherry tomatoes and feta bruschetti. It’s absolutely delicious!

Ingredients:
(4 servings)

2 tablespoons olive oil
2 small zucchini
4 cloves of garlic
20 cherry tomatoes
1 tablespoon tomato paste
1 oregano twig
1 handful of fresh basil
100 grams of Feta cheese
sea salt
freshly ground black pepper
8 slices of toasted bread
extra virgin olive oil for serving

Method:

  1. Wash and slice the zucchini very thin, on the long side, with the vegetables peeler. Place in a bowl with salt and set aside for 30 minutes.
  2. Heat 2 tablespoons of oil in a deep saucepan; add the diced garlic, oregano, drained zucchini slices, cubes cherry tomatoes and the tomato paste. Let simmer for 8-10 minutes then add the chopped basil, 60 g of Feta and season with salt and pepper to taste. Let simmer for 2-3 minutes and set aside to rest.
  3. Toast the bread and put on top of each slice 1-2 tablespoons of the mix and sprinkle with the leftover Feta cheese and serve with a few drops of olive oil and basil leaves (I used Basil Green Ruffes, very intense, with notes of anise).
